We love a BBQ here at Dorset Country Life, and sometimes it’s nice to cook something a bit different on the BBQ other than the more traditional sausages and burgers.


Cooking fish on the BBQ is so simple, but often people are unsure of what to do or how to do it. Here is a quick and easy recipe for cooking a whole sea bass on the BBQ.

Why Sea Bass?

Sea bass is a delicious, flaky fish that holds up well on the grill. It’s mild yet flavourful, making it a hit even for those who aren’t usually fish lovers. Plus, grilling whole fish makes for an impressive presentation, perfect for wowing your guests at your next BBQ.


Ingredients

  • 2 whole sea bass (ready prepared from the supermarket or cleaned by your fishmonger)

  • Lemon slices

  • Fresh herbs: parsley, fennel, and oregano (feel free to mix it up with your favourites)

  • Olive oil

  • Salt

Instructions for Grilled Whole Sea bass

  1. Preparation:

  • Score the flesh of the sea bass with a sharp knife, making diagonal cuts along each side. This helps the fish cook evenly and allows the flavours to penetrate.

  • Rub the fish with a little olive oil and season generously with salt on both sides.

  1. Stuff the Fish:

  • Place lemon slices and a handful of fresh herbs inside the cavity of each fish. The lemon adds a zesty flavour, while the herbs infuse the fish with aromatic goodness.

3. Cooking Methods:

  • Using a Wire BBQ Rack: Clamp the fish securely in a wire BBQ rack. This makes it easy to flip the fish without it sticking to the grill.

  • Using Foil: Alternatively, wrap the fish in a loose foil parcel, leaving enough room for steam to circulate inside.

4. Grilling:

  • Preheat your BBQ to medium-high heat.

  • Place the fish on the grill and cook for 10 to 15 minutes on one side. Then, carefully turn the fish and cook for another 10 to 15 minutes on the other side.

  • Tip: To check if the fish is done, insert a fork into the thickest part of the fish. If the meat lifts easily from the bones, it’s cooked. If not, give it another 5 minutes and check again.

Serving

Once your sea bass is perfectly grilled, serve it hot off the BBQ with a colourful, fresh homegrown salad. The combination of smoky, flavourful fish and crisp, refreshing salad is simply unbeatable.
