Christmas Spiced Orange Rings Recipe

I was recently gifted a jar of spiced orange rings. Never having heard of these or tried them, as a Christmas foody I was naturally intrigued and excited. I was not disappointed! . So I HAD to share this recipe with you all. A wonderful accompaniment to cold meats and cheeses and looks so beautiful on the table and smells amazing too.
Ingredients
6 Oranges
1 ½ pts white wine vinegar
1 ½ lb of sugar. I used 50/50 granulated and brown
4 level teaspoons of cloves
2 x cinnamon sticks
Method
Wipe 6 firm unpeeled oranges and slice into approx. ¼” rounds.
Place them in a pan and only just cover them in water. Bring to a simmer and leave simmering for 45 minutes or until the rings are tender.
Strain the rings retaining the cooking juices as they will be needed again.
Add the vinegar, remaining juice, sugar, cloves and cinnamon sticks into the pan. Stir as you heat to a boil to allow the sugar to dissolve. Boil the liquid for 10 minutes, the smell of Christmas will begin to fill your house although somewhat vinegary.
Carefully add the orange rings back into the liquid in batches. Keep them in the liquid until the rind goes clear and then carefully lift them and put them in sterilized jars.
Once all rings are processed this way, bring the juice back to a rolling boil and leave until it reduces into a syrup. Strain into a jug and take some of the clove and pop approx. 4 in each jar, and pour the now slightly cooled liquid into the jars covering the orange rings. Seal the jars and wait for Christmas if you can!
